Instant Pot Sausage Stew 1 lb Italian sausage (about 3 big sausages) 1 onion ( I don’t always add this) 2 stalks celery 3-4 carrots, chopped 1 cup frozen corn 3 cloves garlic 1 Tbsp tomato paste 1 1/2 Tbsp Italian seasoning 1/2 tsp red pepper flakes (I don’t add this if I use spicy sausage) 1 tsp salt 1 28oz can diced tomatoes 5 cups chicken broth (haha.. no. I use water) 1 1/2 cups green lentils Sometimes I add like to add 1/2 cup or less red lentils for texture and thickening

  1. Chop and cook sausage in a different pan, pour out fat
  2. Add everything to the pot
  3. Cook 15 minutes on manual/high (original recipe says 10 but then the lentils can be a little hard). Natural release 10 minutes on keep warm

This is the “whatever I have left in the fridge goes in” stew. Throw in anything, zucchini, cabbage, yam, mushrooms.. I never stick to the recipe for veggies except like 2-3 carrots.
