Hummus
Ingredients
- 1¼ cup chickpeas
- 6 cups water
- 2 whole cloves garlic
- ⅓ - ½ cup lemon juice
- ⅓ - ½ cup olive oil
- ½ cup tahini
- 8-10 cloves garlic (I used like 4 and it was quite garlicky)
- 1 cup chickpea water
- 1¼ tsp kosher salt
- 1 tsp cumin
Directions
- Manual, high 38-40 mins, natural release for 30 mins
- Keep 1 cup of chickpea liquid, drain chickpeas
- Blend tahini paste, garlic and lemon juice in food processor until smooth and garlic is minced
- Add half of the chickpeas, half the olive oil and 1 Tbsp of chickpea water, process until smooth
- Add remaining chickpeas, salt, cumin, rest of olive oil and while processing keep adding chickpea water (and maybe some lemon juice) until desired consistency. don’t need to add all of the chickpea water.
