Green Lentil Curry
Ingredients
1½ Cup green lentils
1 carrot
2 Tbsp minced garlic
3 Tbsp minced ginger
¾ tsp coriander
¾ tsp cumin
½ to 1 Tbsp brown sugar
1 tsp salt
¾ tsp turmeric
⅛ to ¼ tsp chilli powder
1 Can coconut milk
1½ Cups water
1 block frozen spinach

Directions
Rinse and drain the lentils.
Mince carrot, garlic, and ginger in a food processor.
Fry carrot, garlic, and ginger until soft.
Add spices and add a little water to make a paste.
Fry the resulting paste for a bit.
Add lentils, coconut milk, water, and spinach.
Cook on high manual for 15 minutes
Natural release on keep warm for 10 minutes.
Add cilantro to taste.
