Chocolate Zucchini Cake
Ingredients
¼ Cup butter
1¾ Cups sugar
½ Cup oil
2 eggs
1 tsp vanilla
½ Cup buttermilk or sour milk
2½ Cups flour
4 Tbsp cocoa
½ tsp baking powder
1 tsp baking soda
½ tsp cinnamon
½ tsp ground cloves
2 Cups grated, unpeeled zucchini
½ Cup chocolate chips
Directions
Preheat oven to 325℉
Cream butter and sugar.
Add oil, eggs, vanilla, and buttermilk.
Combine flour, cocoa, baking powder, baking soda, cinnamon, and ground cloves.
Add to creamed mixture.
Fold in zucchini and chocolate chips.
Pour into a greased and floured 10" bundt pan. Bake 60 minutes or until top springs back when lightly touched.
OR
Bake in 2 greased and floured 9"x5" loaf pans for 60 minutes or until top springs back when touched.
